ABSTRACT

Aflatoxin M[1] [AFM[1]] levels in 52 samples of UHT milk that were produced by different plants in province of Tehran were analyzed by competitive ELIZA. AFM[1] was found in 100 percent of 52 of the UHT milk samples that were analyzed in this study. The range of contamination levels varied in two seasons of summer and autumn. AFM[1] in summer and autumn samples ranged from 22.40 to 84.80 and 19.40 to 93.60 ng/kg respectively, while the mean values were 69.22 and 65.50 ng /kg respectively. Statistical evaluation showed that there were not significant differences [p>0.05] between the concentrations of AFM[1] of UHT milk samples produced in summer and autumn. In other words, AFM[1] contents of UHT milk samples produced in summer were not lower than UHT milk samples produced in autumn. Almost 79.92% of the contaminated samples exceeded the maximum acceptable levels [50 ng/kg] that accepted by some of the European countries. It was, therefore, concluded that, high occurrence of AFM[1] in UHT milk samples was considered possible hazard for human health

ABSTRACT

Aflatoxina M1 (AFM1) foi pesquisada em 300 amostras de leite em pó distribuído pelo Programa de Alimentaçäo Escolar do Município de Säo Paulo, SP-Brasil. As análises foram efetuadas através do ensaio por enzimas imuno-adsorvidas (ELISA), mediante o emprego de conjuntos de reativos produzidos em escala comercial. As amostras foram reconstituídas em água a 1:8 e submetidas diretamente ao ensaio, sem etapas de purificaçäo. Os resultados revelaram 72 amostras (24,0 por cento) positivas para AFM1, em concentraçöes de 0,01 - 1,00 ng/ml, com média de 0,15 ng/ml. Concentraçöes acima de 0,10 ng/ml foram observadas em 33 amostras (11,0 por cento). O método de ELISA foi avaliado no laboratório, através da execuçäo de análises repetidas em amostras de leite experimentalmente contaminado com a toxina. Utilizando os dados de consumo de leite, adotados pelo Programa, para crianças de 4 meses de idade (máxima ingestäo), estima-se a ingest ao diária média de 3,7 ng de AFM1/Kg de peso corpóreo/dia. Discute a importância destes dados para a saúde humana, bem como os princípais aspectos relativos ao estabelecimento de limites de tolerância para a AFM1 em leite e derivados
